TASTING NOTES
Excellent colour, which is the result of concentration due to the low yield, nose shows dark cherry and plum, with the roasted mocha and tobacco pouch from well prepared French oak. The palate offers excellent focus and intensity, multi layered with dark chocolate and fennel underpinned by silky tannins. The wine is still young, but shows all the characteristics necessary for terrific development over time.

85% Cabernet Sauvignon, 15%Shiraz
IN THE VINEYARD
The vineyard was planted in 1992 and is located 150m above sea level on a north-west facing slope in the Bottelary Hills of Stellenbosch. Gravel soil offers less vigorous growth which, together with sufficient heat due to the slope and altitude, leads to ideal ripening conditions for fully ripened grapes.
Training method: 5-wire vertical trellis
Harvest date: 11 March 2010. Harvested by hand
Yield: Average of 34 hl/Ha and 5.6 tons/Ha
IN THE CELLAR
Wine was matured for 21 months in small barrels. Barrels were selected to be allocated for this wine. Wine was not filtered before bottle g and only racked out of the barrels before being bottles by hand.
Barrel profile: 50% 1st fill, 25% 2nd fill and 25% 3rd fill. 100% French oak.
Bottling: 13 October 2014 at Mooiplaas
